Another old favourite!

This is another one of my aunt's old recipes. Apparently kids couldn't get enough of this one in the 50s and 60s. It's a dead easy recipe and shows how a dessert can be made with a minimum amount of ingredients.

Here are the ingredients - again, this is a recipe for about 100 kids - so you may want to cut it back a little.

4lbs Flour 4lbs Fresh Breadcrumbs

3-4 lbs of Suet 5 oz Baking Powder

Cold Water to mix 10 lb of Jam

Some milk to glaze

Method

You need to make the pastry first. This is what my aunt's notes say - she is 82 now and getting on a bit and has little recollection on how to make this pastry. But you add all the dry ingredients to a bowl and mix together. You will need to add and mix in water a little at a time until you are able to lift up the dough and leave the mixing bowl clean. When you can do this leave the pastry for 20 minutes or so to rest.

After it has rested, roll out and liberally cover with jam. Once you've done this roll it up, a la Swiss Roll, and cut the ends of so they nice and smooth.

Unusually for my aunt she has the oven heat - 375 degrees - so glaze with the milk and bake for a couple of hours.

It works really well with custard - but that's a recipe for another day!!

I don't fancy the suet or vegetarian suet either. Any alternative? I love fruity style puddings like these.
