Fudges are easy to prepare at home and you don’t need much ingredient for preparing it. There are various type of Fudge like

I have added only the recipes of Russian fudge and Passionfruit fudge in this hub.

Russian fudge


Recipe 1#

Preparation Time : 15 Mins + refrigeration – 50 Mins

Serves 36 Pieces

Ingredients

Ø 2 2/3 cups caster sugar

Ø 1/2 cup milk

Ø 125 g butter

Ø 200 g sweetened condensed milk

Ø 1 tablespoon golden syrup

Preparation:

1. Lightly brush a 20 cm square tin with melted butter.

2. Line the base with baking paper, extending over 2 sides.

3. Place the caster sugar and milk in a medium heavy-based pan. Stir to combine.

4. Place a heat pad on the burner or element. Place the pan on the heat pad, cover and bring slowly to the boil over low heat. (20 mins).

5. Brush the sugar crystals from the sides of the pan with a wet pastry brush.

6. Add the butter, condensed milk and golden syrup to pan. Stir until mixture is smooth.

7. Boil the mixture, uncovered, for 30 minutes.

8. The mixture will now be a deep caramel colour.

9. Set aside to cool slightly and then beat with electric beaters until the fudge starts to thicken and becomes creamy.

10. Pour into the tin, smooth the surface, cover with plastic wrap and refrigerate for several hours to set. Cut into diamonds or squares. Decorate with icing flowers if you like.

Recipe 2#

Ingredients

Ø 1 1/2 lb sugar

Ø 1/2 cup milk

Ø 1/2 tin of sweetened condensed milk

Ø 4 oz butter

Ø 1/4 tsp salt

Ø 1 tblsp golden syrup


Put sugar and milk into pan and bring to the boil. Add condensed milk, butter salt, and golden syrup. Boil 1/2 an hour stirring frequently. Beat until thick, about 5 mins. Pour into greased tins, mark and cut when set. Vanilla and nuts may be added if desired.

Recipe 3#

Recipe for Russian Fudge is made in the microwave.


Prep Time: 25 minutes

Cook Time: 17 minutes

Ingredients:

Ø 3 cups sugar

Ø 1/2 of 14 ounce can sweetened condensed milk

Ø 4 ounces butter

Ø 1 teaspoon vanilla

Ø 1/2 cup milk

Ø 1 tablespoon golden syrup

Ø pinch salt

Ø 1 cup chopped and lightly toasted nuts

Preparation:

1. Place all ingredients except nuts in a very large microwavable bowl.

2. Stir to mix & cook on high for 15 to 17 minutes stirring well every 3 minutes.

3. Remove from oven and beat until thick, approx, 5 minutes.

4. Add nuts and pour into a greased tin, and cut when set.

5. For chocolate fudge: Add 6 ounces chocolate chips with nuts.

Note: These recipes use NZ measurements. 1 c = 1 cup = 250 ml. 1 T = 1 tablespoon = 15 ml. 1 D = 2 teaspoons. 1 t = 1 teaspoon = 5ml. If you're in America, you may find you need a little extra baking powder in recipes that use it.

Passionfruit Fudge

Recipe 1#

Ingredients:

Ø 2 cups sugar

Ø 1 tablespoon butter

Ø 1/2 cup yogurt

Ø 3 tablespoons passion fruit juice concentrate

Ø 2 tablespoons coconut cream

Preparation:

1. Place sugar, butter, and yogurt into heavy-based saucepan.

1. Stir over low heat until sugar is dissolved; bring to the boil.

2. Boil without stirring until 239F or soft ball stage is reached.

3. Remove from heat.

4. Leave for 4-5 minutes.

5. Stir in passion fruit concentrate and coconut cream and whip until mixture is thick and creamy.

6. Pour into lightly buttered 8 x 8 pan.

7. While still warm but firm, cut into squares.

8. Leave until completely set before removing from tin.
