Pepperoni Bread
When Nunny made her bread, she sometimes used that last loaf to make this tantalizing specialty bread. All of Nunny's yeast breads except her sweet bread come from the same recipe. She just formed the loaves or added extra ingredients.
In this case you can use the 7th loaf or make all 7 loaves in this fashion. The basic recipe is repeated here but the instructions include the added steps to make this treat that our family includes on the holiday tables.
INGREDIENTS
5 lbs. flour plus a little
a pinch of salt
2 handfuls of powdered milk
$1 worth of cake yeast from bake shop (about 2 cakes from grocery store)
1/3 cup sugar
two handfuls of Crisco
1 lb. Pepperoni sliced thin
grated Mozzarella Cheese
How To Mix and Bake
Step 1.
Preheat Oven to 350°
Soften the yeast in your large mixer bowl filled about 3/4's full with lukewarm water.
Put all of the dry ingredients into a large aluminum restaurant bowl (substitute your largest bowl because this recipe tends to raise fast and voluminously).
Pour the softened yeast and water over the dry ingredients.
Add Crisco.
Mix well by hand until all of the flour is absorbed and the dough feels smooth. You will add additional flour if the dough feels too moist or additional crisco if the dough feels too dry.
Set the bowl in a warm place to raise with an old style linen towel covering the bowl.
Depending on the type of yeast you used the dough will be raised in approximately 1/2 hour to and hour.
Step 2:
Punch down the raised dough and cut into 7 portions.
At this point you can either form your loaves or put some of the portions into freezer bags and feeze for use at another time. If you are using the frozen dough -- set it out in the refrigerator overnight before using.
Take 1 portion of dough and flatten it out like you were going to make pizza shells. Sprinkle the pepperoni slices and shredded mozzarella. Roll up the loaf and cover with the towel and set back to raise.
Step3:
Place the raised loaf of bread in the oven to bake.
Bread is done when it is golden brown and sounds hollow when knocked on in center of the loaf.
Remove bread from pans onto racks to cool. While bread is cooling spread some Crisco onto the entire loaf to keep the bread from drying out.
Our family really likes this bread and when we make it we don't have any dough left over for anything else.
