Recipes From Nunny - Corned Beef Brisket

What does corned beef have to do with Italian cooking? I really can't answer that question. All I know is I found this recipe among Nunny's and it is worth the time to make.

Ingredients

4 lb. Beef Brisket
pickling spice
stalk of celery
peeled carrot
whole onion
dry mustard
1/3 cup brown sugar

How To Mix, Cook and Roast

Place brisket in large cooking pot and cover with boiling water.
Add pickling spice, celery, carrot and onion.
simmer for 4-4-1/2 hours on low heat.
take brisket and place in roasting pan.
Score brisket diagonally.
Rub dry mustart and brown sugar into roast.
pour pickling juice into pan. Roast for an hour at 300°.
