Summer is so much fun with abundance of vegetables for salads that you can only make in the summer. This cucumber recipe can be made with or without sour cream dressing. I'm going to give you both recipes here.
Cucumber-Onion Salad
- 2 mild onions
- 2 large cucumbers
- salt
- water
- 1/2 cup vinegar
- 1 teaspoon sugar
- pepper
Peel onions andcucmbers and cut into wager thin slices. Cover with salted ice water and let stand in refrigerator for several hours. Drain and add 1/4 cup cold water, vinegar, sugar and salt. Pepper to taste.
Makes 4-6 servings
Cucumber Salad with Sour Cream Dressing
Almost the same as above. Peel onions andcucmbers and cut into wager thin slices. Cover with salted ice water and let stand in refrigerator for several hours. Add 1/2 cup sour cream and 1/2 cup vinegar. Garnish with chopped chives.
TIPS - The one thing to remember about cucumbers is that you can not freeze cucumbers. Shelf life is 1-2 weeks refrigerated on shelf raw until ready to use them. Once cooked, shelf life is 1-2 days.
