My Favorite Way to Eat a Yam - Vegetarian or Vegan

I just made this for a late night snack. Oooooh the sauce is so good. It definately tastes best made with butter and half and half but Vegans can enjoy this recipe, too, by using the substitutions. This is my favorite way to eat yams and this recipe makes a meal for one. You can increase it to serve more people. I served yams this way for Thanksgiving once and even the people who said they hated yams gobbled them up. It's a delicious alternative to candied yams.

Pan Fried Yams with Easy Butterscotch Sauce

Serves one.

Ingredients:

  • 1 yam
  • 1 1/2 T butter (or margarine)
  • 1 heaping T brown sugar
  • 1 T half and half (or Silk brand soymilk)

Step One: Peel the yam and slice into 1/4" thick slices.

Step Two: Heat a large cast iron skillet over medium heat. Add 1/2 T butter. Add yam slices in one layer.

Step Three: Cook yams, turning occasionally with a fork, until golden brown and tender. Remove to warm plate.

Step Four: Reduce heat to medium low. Add remaining 1 T butter. When butter has melted, add the brown sugar. Whisk together and stir gently until slightly bubbly. Whisk in the half and half. Whisk until all the brown sugar/butter mixture is well incorporated and you have a nice sauce. Add a bit more half and half if necessary to achieve desired consistency.

Step Five: Pour sauce over the yams and serve at once.

Tips:

  1. If you need to serve more people, just keep cooking yam slices one layer at a time until all are done. Increase sauce ingredients accordingly.
  2. This must be served and eaten immediately. It doesn't save well.

This is my favorite way to have yams. I sprinkle a bit of garlic on the yams and cook them in the oven. Yum..

I'm on my way soon for groceries I will be eating yams tonight.
