Red Bean and Tuna Fish Salad

Ingredients:

  • 2 green apples, cored and thinly sliced
  • 1 tbsp lemon juice
  • 1 tbsp finely chopped onion
  • 1 x 7 oz can tuna fish, drained and roughly flaked
  • 1 inch pc. Cucumber, diced
  • salt
  • Freshly ground black pepper
  • 4 tbsp French dressing
  • 1 x 10 oz can red kidney beans, well drained

To Garnish

  • Watercress sprigs
  • 1 hard-boiled egg

Procedure:

  1. Dip the apple slices quickly in lemon juice and put into a bowl with the onion, tuna, fish, cucumber, plenty of salt and pepper and the dressing.
  2. Mix lightly and leave to stand for about 20 minutes.
  3. Stir beans into the salad.
  4. Arrange on two plates and garnish with sprigs of watercress around the edge and sliced, chopped or grated hard boiled egg on top.
