Red Bean and Tuna Fish Salad

Ingredients:
- 2 green apples, cored and thinly sliced
- 1 tbsp lemon juice
- 1 tbsp finely chopped onion
- 1 x 7 oz can tuna fish, drained and roughly flaked
- 1 inch pc. Cucumber, diced
- salt
- Freshly ground black pepper
- 4 tbsp French dressing
- 1 x 10 oz can red kidney beans, well drained
To Garnish
- Watercress sprigs
- 1 hard-boiled egg
Procedure:
- Dip the apple slices quickly in lemon juice and put into a bowl with the onion, tuna, fish, cucumber, plenty of salt and pepper and the dressing.
- Mix lightly and leave to stand for about 20 minutes.
- Stir beans into the salad.
- Arrange on two plates and garnish with sprigs of watercress around the edge and sliced, chopped or grated hard boiled egg on top.
