Quiche is easy to make and can be filled with just about anything. Here is a colorful one that will be a welcomed addition to any buffet table. Serve on a platter for a more grandiose effect.

Ingredients

  • 1 ready-to-use pie crust
  • 3 large eggs or 6 egg whites, slightly beaten
  • 1/2 cup low-fat sour cream
  • 2/3 cup milk (soy or low-fat OK)
  • 1/2 cup Swiss cheese
  • 1/2 red pepper
  • 1/2 green pepper
  • Salt and pepper to taste

Preparation

  1. Heat oven to 400F.
  2. Dice or finely chop red and green peppers.
  3. Combine eggs, sour cream, milk and cheese in a bowl and whisk. Stir peppers into egg mixture. Salt and pepper to taste.
  4. Pour mixture into pie shell and bake for 35 minutes until golden on top. Serve warm or at room temperature.

Note : Can be made a day or two in advance and stored in refrigerator wrapped in plastic wrap.
