55Quiche is easy to make and can be filled with just about anything. Here is a colorful one that will be a welcomed addition to any buffet table. Serve on a platter for a more grandiose effect.
Red and Green Quiche Squares
Ingredients
- 1 ready-to-use pie crust
- 3 large eggs or 6 egg whites, slightly beaten
- 1/2 cup low-fat sour cream
- 2/3 cup milk (soy or low-fat OK)
- 1/2 cup Swiss cheese
- 1/2 red pepper
- 1/2 green pepper
- Salt and pepper to taste

Preparation
- Heat oven to 400F.
- Dice or finely chop red and green peppers.
- Combine eggs, sour cream, milk and cheese in a bowl and whisk. Stir peppers into egg mixture. Salt and pepper to taste.
- Pour mixture into pie shell and bake for 35 minutes until golden on top. Serve warm or at room temperature.
Note : Can be made a day or two in advance and stored in refrigerator wrapped in plastic wrap.
