"Redneck" Crispy Potato Wedges

“Growing up in Idaho, fry sauce with hamburgers, fries or tater tots was a staple. Most of us assumed that fry sauce was readily available everywhere you went that served burgers and fries. Boy were we wrong. Most people outside of Idaho and Utah had NO idea what fry sauce was until we “educated” them. Talk about a culture shock for us!”


Ingredients:

4 medium russet potatoes cut into large wedges

1 tbsp. vegetable oil

1 pkg of Hidden Valley Ranch dip


Directions:

Place potatoes in a large bowl add cold water to cover. Let stand for 15 minutes.


Preheat oven to 425° F. Spray a nonstick baking sheet with cooking spray. Set aside.


Drain potatoes in a colander. Spread on a double layer of paper towels. Cover with a second layer of paper towels. Press down on the towels to dry potatoes.


Place potatoes inside a large Ziploc bag. Add a pkg of ranch dip. Close bag and shake till thoroughly coated. Arrange seasoned potatoes in a single layer on a prepared baking sheet.


Bake potatoes for 20 minutes. Bake until golden about 20 minutes, turning baking sheet after 10 minutes for even browning. Serve immediately with ketchup or fry sauce.


Fry Sauce:

Essentially fry sauce is equal parts ketchup & Miracle Whip (or mayo if you prefer). Some people like a little relish added to it or even a little BBQ sauce for a smoky flavor.
