During the colder month, it is nice to have some hot and satisfying. I happened to think of Rice Noodle in Soup. It is easy to make but need a little preparation time. You can find most of the ingredients in an Oriental Grocery store. The beauty of cooking is no right or wrong. You can adjust the taste and ingredients accordingly.

Ingredients:

Dried Rice Noodle (soak in cold water as directed)

Chicken Broth (24 oz.)

Chicken Breast (chopped in pieces, marinade with soy sauce, white pepper, sesame oil, corn starch, dash of sugar)

Chinese Cabbage (a cup or two)

Bean Sprouts (a cup)

Chinese Black Mushrooms (two or three soaked in boiling hot water, then slice it into strips) Be careful when you cut them, make sure you have them face up so you can see the top, otherwise, it will be slippery)

Cilantro (chopped a few pieces)

One small Lime (slice a couple pieces, the rest squeezed juice in soup)

A Dash of Oyster Sauce (Before buying a bottle, you might be able to ask you frequently

visit Chinese Restaurant. It comes in 18 oz.)

I first soak the Rice Noodle in cold water as instructed. Soak the Black Mushrooms in hot boiling water. In a big pot, put in Chicken Broth, Black Mushrooms, and Chinese Cabbage. Bring it to boil, put in Chicken pieces. When Chicken is cooked, put in the Rice Noodle. Bring to boil. Put in a dash of Oyster Sauce to the soup. Squeeze the Lime Juice into the soup. Remove the pot from the stove. Put in Bean Sprouts. Now, put the Chicken Rice Noodle in a Bowl, garnish it with Cilantro and a slice of Lime. Enjoy it!

Mmmmmmm...sounds good! I usually use beef instead of chicken. But I'm sure its just as good!
