Additionally, you do not want your lights to be too low, people need to be able to see what they are eating, but you do want your lights to correspond to the mood you are trying to set.

For this reason, many restaurant owners attach their ambient lights to a dimmer and bring them down as the night progresses, but not too dark as you want your guests to be able to see what's going on around them.
