I've been seeing TV commercials lately for Olive Garden's Chicken and Sausage Rollatinis. These items are only on the menu for a limited amout of time. One of my hobbies is to create my favorite restaurant foods at home. I don't have an Olive Garden anywhere near me so I decided to figure out how to make these in my kitchen. The Olive Garden website has quite a few recipes on it but I didn't see anything for their rollatinis. After some research here is a quick and easy way to enjoy rollatinis similiar to those served at Olive Garden.

Lasagna Rollatini consists of a lasagna noodle rolled into a tube and filled with spinach and cheese, covered with sauce and topped with grilled meat.


Sausage Rollatini

Oven-baked lasagna rolls stuffed with four Italian cheeses and spinach, topped with grilled Italian sausage and melted mozzarella cheese in a tomato alfredo sauce.

Okay, First you boil your lasagna noodles for about 6 or 7 minutes. I like to make a big batch and freeze the extra rollups for homemade TV dinners.

THE FILLING

The filling base is ricotta cheese. To that you simply add an egg to hold the ingredients together.Then have fun adding whatever you like such as grated parmesan cheese, shredded italian cheeses, fresh chopped spinach or frozen spinach that has been sqeezed dry.

THE SAUCES

Personally, I do not make my sauces from scratch. There are many great bottled sauces at your local grocery store. My favorite ones are from Classico, Barilla, and Bertolli. Spend some time seeing what is available in your area. You can always add more ingredients to doctor up a sauce from a jar to make it your own. Play around with meats, vegetables and cheeses to get a one of a kind creation.

The tomato alfredo sauce listed above can be made by simply adding some spagetti sauce into a jar of alfredo sauce.

The fontina cheese sauce can be made by simply melting grated iitalian cheese into a jar of alfredo sauce.

THE MEAT

This one is easy. Just grill chicken breast strips or italian sausages. I use my George Forman grill because it cooks quickly.


Putting it all together is a snap since everything is basically already cooked. What I do is put one or two lasagna rollups on a plate per person then offer several types of jarred sauces and sliced grilled meat. Each person can customize their rollatini to their particular taste. The plate gets popped into the microwave for 2-3 minutes to heat the sauce and melt the cheeses. Then its chow down time. Its best to let the plate rest for a few minutes so the filling will set and not run.
