Who doesn't love Olive Garden's salad? If you say, "me", you're just going to have to post a comment here and tell us all why! A friend of mine makes an exact replica of an Olive Garden salad and the only thing she buys from Olive Garden is their dressing. I love this salad and everytime we get together with our friends I ask for the salad, why? Because Olive Garden's salad has to rank in the top 5 of my all time favorite salads. There's just something about their dressing, and I get a kick out of her ability to mirror it exactly how they make it. Some day I'm going to marinate some chicken in the dressing overnight - I know that along with some grill flavor has got to taste out-of-this-world!

Ingredients:

  • 1 large bag of salad mix
  • 1 can of whole black olives, drained
  • 1 red onion, sliced

  • 1 jar of peppercini, drained

  • 1 jar shredded parmesan

  • 1 box croutons


Method:
1. Cool your salad bowl in the fridge for a few hours so it's cold!!

2. Add the dressing in the bottom of your serving bowl

3. Combine all the ingredients, toss and serve!

House Italian Dressing

1/2 cup mayonnaise
1/3 cup white vinegar
1 teaspoon vegetable oil
2 tablespoons corn syrup
2 tablespoons parmesan cheese
2 tablespoons romano cheese
1/4 teaspoon garlic salt
1/2 teaspoon italian seasoning
1/2 teaspoon parsley flakes
1 tablespoon lemon juice

If I'm in a hurry I just add mayonnaise and parmesan cheese to a regular bottle of Italian salad dressing.

Olive Garden Tuscany Bread

Packaged bread sticks.

Preheat oven to 350

Brush with olive oil and sprinkle with parmesan cheese and wrap in aluminum foil.

Place in oven for 12-15 minutes

Freshly prepared alfredo and marinara sauce, served warm.

Pasta e Frigolio Soup

White and red beans, ground beef, tomatoes and pasta in a savory broth.


Ingredients
• 2 lbs ground beef
• 1 onion, chopped
• 3 carrots, chopped
• 4 stalks celery, chopped
• 2 (28 ounce) cans diced tomatoes, undrained
• 1 (16 ounce) can red kidney beans, drained
• 1 (16 ounce) can white kidney beans, drained
• 3 (10 ounce) cans beef stock
• 3 teaspoons oregano
• 2 teaspoons pepper
• 5 teaspoons parsley
• 1 teaspoon Tabasco sauce (optional)
• 1 (20 ounce) jar spaghetti sauce
• 8 ounces pasta


Directions
1. Brown beef in a skillet.
2. Drain fat from beef and add to crock pot with everything except pasta.
3. Cook on low 7-8 hours or high 4-5 hours.
4. During last 30 min on high or 1 hour on low, add pasta.

Minestone Soup

Fresh vegetables, beans and pasta in a light tomato broth a vegetarian classic.

Ingredients:
1 cup each: finely minced celery, onion, and carrot
1/4 cup butter
1/2 cup each: garbanzo beans, kidney beans, whole dried peas, white pea beans
3/4 cup carrots sliced
3/4 cup onion coarsely chopped
3/4 cup celery sliced
3/4 cup bell pepper chopped
1/2 cup rice or barley
1 cup shell macaroni
2 tablespoons minced parsley
1 teaspoon oregano
1 teaspoon basil
2 teaspoons soy sauce
Parmesan cheese


Slowly saute finely minced onion, celery and carrot in butter until very brown. Add peas and beans and about 3 quarts of water. Cook slowly until beans are almost done (check garbanzos - they take longest) about 2 to 2 1/2 hours. Add the remaining vegetables, rice and spices and more water if necessary and cook another hour. About 20 minutes before serving time add the macaroni and more water if needed. Ladle into bowls and sprinkle with Parmesan cheese. Pepper to taste

Zuppa Toscana Soup

Spicy sausage, russet potatoes and cavolo greens in a creamy broth.

Ingredients

* 1 lb Italian sausage (I like mild sausage)
* 2 large russet baking potatoes, sliced in half,and then in 1/4 inch slices
* 1 large onion, chopped
* 1/2 can oscar meyer bacon bit
* 2 cloves garlic, minced
* 2 cups kale or swiss chard, chopped
* 2 cans chicken broth
* 1 quart water
* 1 cup heavy whipping cream

Directions

1.Cook sausage in a 300°F oven for approximately 30 minutes.
2.Drain sausages on paper towels and cut into slices.
3.Place onions, potatoes, chicken broth, water, garlic in pot, and cook on medium heat until potatoes are done.
4.Add sausage and bacon.
5.Salt and pepper to taste.
6.Simmer for another 10 minutes.
7. Turn to low heat.
8.Add kale and cream.
9.Heat through and serve.

Seafood Pasta Chowder

6 oz Small shells or bowties
3 oz Crab meat
6 tb Butter
1/2 lb Sliced fresh mushrooms
2 pk (1oz each) Newburg sauce

Mix 3 c Milk 1 1/2 c Water 1/4 c Dry white wine 1/4 c sliced green onions.

Cook pasta according to package directions.

Sort crab meat to remove any shell pieces. Melt butter in 3-quart non aluminum sauce pan. Add mushrooms; sauté for 3 minutes. Add sauce mix; stir well.

Add milk, water and wine; stir well with a wire whisk until mixture comes to a boil.

Reduce heat; simmer 5-8 min; stirring constantly.

Add green onions, pasta and crab; stir to combine. Heat through.

Chicken & Gnocchi Soup

I tried this recipe and it is the closest you can come to the soup at Olive Garden. As with the Olive Garden soup, it can taste a little different each time you make it. From beginning to end it takes about 10 min. of prep and 30 min. cook time.


1/3 cup butter
2 cloves of minced garlic
1 lb. chicken cubed or large chunks
1/3 cup flour
1/2 carrot shredded
1 stick of celery shredded
1/4 cup onion shredded
1/2 cup fresh spinach torn in pieces
2 cups whole milk
2 cups heavy cream (I use half and half)
3 chicken bullion cubes
Cracked pepper to taste
17.6 oz. of Gnocchi

On medium heat.
Melt butter in a soup pot, add in the garlic and sautee, add your chicken and cook through out
Add flour and stir in flour and mix well until the flour is cooked into the chicken.
Next add your milk and heavy cream
Then add the veggies(Carrots, Celery, Onion, Spinach)
Add three bullion cubes
Add your Gnocchi last it takes 3-4 min. to cook throughout
Mix ingredients well until soup thickens and stirring occasionally. Cover and simmer for 10 minutes.

Angel Hair and Three Onion Soup

1/2 pound pearl onions
1 medium red onion sliced thin
1 medium Vidalia onion sliced thin
4 tablespoons olive oil
6 cups chicken stock
Salt
1/4 teaspoon Red Pepper flakes
1/2 pound Angel Hair,
broken in 2 inch pieces
1/4 cup chopped Italian Parsley
4 teaspoon grated Romano Cheese

1. Place onion and oil in a large sauce pan over low heat and saute, stirring occasionally, about 20 minutes, until onions are soft.
2.Add stock and salt to taste. Sprinkle with hot pepper flakes and simmer for about 1 hour.
3.Add pasta and parsley and cook until pasta is al dente.  Sprinkle with grated Romano cheese.

Serves 6
