Maine Lobster and Crab Bake

This dish consists of garlic-roasted split Maine lobster tails, sea scallops and jumbo shrimp with 1/2 pound of snow crab legs served with red potatoes, corn on the cob and fresh broccoli.


New Orleans Shrimp Jambalaya

This dish is a spicy Lousiana classic with wood-grilled shrimp, sweet roasted peppers, onions, celery, andouille sausage and creole seasonings over wild rice pilaf



Maui Luau Shrimp & Salmon

Wood-fired salmon and skewered jumbo shrimp brushed with a sweet and spicy glaze served over wild rice pilaf with grilled pineapple.

  • 2 5-6oz skinned salmon fillet
  • 12 26-30 count peeled shrimp
  • 2 bamoo skewers (soaked in water for 10-15 minutes)
  • 4 fresh pineapple slices
  • olive oil
  • Sweet chili sauce
  • salt and pepper to taste

Sweet chili sauce in found in the Asian section of your supermarket.  It should not be confused with the thicker tomato version of chili sauce.


  1. Slide 6 shrimp onto each skewer.  Brush both sides of the shrimp and salmon with olive oil
  2. Brush pineapple slices with olive oil.
  3. Grill salmon about 6-7 minutes per side.
  4. Grill shrimp about 3-4 minutes per side.
  5. Grill pineapple 2-3 minutes per side.
  6. Brush all items with the sweet chili sauce
  7. Place the pineapple on the plate, add your favorite rice and top with salmon and shrimp skewer.
