Risotto Recipes

Risotto is one of the trademark of italian cuisine. There are literally hundreds of risotto recipes that you can choose from and once you know the basics you can invent your own. The sky is the limit!!

However, in order to make a good risotto you must follow some fundamental principles/steps.

Are you ready? Ok let´s get it on.

Ingredients for risotto recipes: (6 servings)

5 cups of stock (chicken, beef or vegetable)

2 medium onions finely chopped

1 4oz medium grain rice such as Arborio or Carnaroli.

2 Wineglasses of dry white wine.

Sea salt, and some black pepper

5 Tablespoons of butter

4 oz. of fresh grated parmesan cheese.

First step: Heat the stock. In a separate pan put some butter and the onions and fry slowly for about 5 minutes. The onion should be slightly yellow or as they say in Italy "blond". Add the rice to the onions and increase the heat to medium.

Second step: Once the rice starts frying you must continually stirr it so that it won´t attach to the pan. After a couple of minutes add the white wine and keep stirring. The wine will soon evaporate.

Third step: Add first ladle of hot stock and some salt and turn down the heat slightly so that the rice does not fry to fast. Keep stirring and once each ladle of hot stock has been absorbed add another one and keep stirring. Check if you need to add more salt by tasting the rice. After about 20 min. try the rice and see if it is coocked.

Fourth step: Once you are sure the rice is ready, turn the heat off and add the parmesan, the rest of the butter and some black pepper. Stir a little. After about 3 mins. your risotto will be ready. Eat right away.
