Rosemary and Lemon dressing

 

With summer nearly here this simple salad dressing is used up quiet quickly, and is full of healing properties.

1 sprig of rosemary

1 clove of garlic

1 strip of lemon peel

6oz/175ml of olive oil

1oz/50ml lemon juice

Lightly crush the rosemary and garlic with the back of a knife.

Put all the ingredients into a clean bottle, put on the lid and shake well.

Keep in the fridge and use within a week.

I find that it tastes better after being marinated at least a day.

Use on salads, pasta or vegetables.

So it tastes great and is good for you.

Eating this dressing can help aid digestion, fight infections and speeds up healing, helps to lower cholesterol and so reduces risk of heart disease, lowers blood pressure.

It is also good for reducing allergy symptoms if you use the rosemary in flower.
