MAYONNAISE

 Mayonnaise is an emulsion.An emulsion is a uniform mixture of two unmixable liquids(for example:oil and water).To make mayonnaise oil is whisked together with a very small amount of vinegar.It is the water in the vinegar that does not normally mix with oil.For mayonnaise the emulsifier is lacithin,a protein found in eggyolks.One yolk contains enough lecithin to emulsify approximately 7oz. of oil.If more than that amount of oil  per egg yolk is added,the sauce will break(separate).Mayonnaise is a very versatile emulsified sauce and an extraordinary base to make another sauce.The following recipes are made based in mayonnaise.Enjoy!

HOMEMADE MAYONNAISE(STANDARD RECIPE)

Ingredients

 1 Qt.(1Lt.)

4each,Egg yolks

1tsp. Dry Mustard

3bsp. Wine Vinegar

to taste Lemon Juice

28oz.Vegetable Oil

to taste Salt and Pepper

 

Procedure

1.Place the egg yolks in a mixing bowl(or bowl of a mixer)and whisk on high speed until frothy.

2.Add the dry ingredients and half the vinegar  and lemon juice to the yolks  and whisk to mix.

3.Add the oil in a very slow stream until the mxiture begins to thicken.

4.Season to taste and refrigerate until needed.

 

CILANTRO MAYO DIP

 Ingredients

1/2cup Mayonnaise

3oz. Ketchup

2oz. Cilantro,chooped

to taste Garlic,minced

pinch Paprika,(optional)

to taste Salt and Pepper

Procedure

1.Put all the ingredients in a mixing bowl and mix with a spoon.Season to taste  and refrigerate until ready to use.

BLACK OLIVE CREAMY DRESSING

 1cup Mayonnaise

3oz. Black Olives,pitted and minced(almost like a paste)

as needed Buttermilk

2oz. Garlic,minced

to taste Salt and Pepper

Procedure

1.Put all the ingredients in a mixing bowl and add the buttermilk as needed to make it thinner.

2.Season to taste with salt and pepper.Set aside until ready to use.

 


ROASTED PEPPER SPREAD

Ingredients

1each Red Bell Pepper,roasted and peeled

as needed Olive Oil

4oz. Mayonnaise

4oz.Cream Cheese

3oz. Scallions,chopped

to taste Salt and Pepper

Procedure

1.Wet the Red Bell Pepper in Olive Oil and burn the skin directly in the fire(you can use the grill or burner),until completely dark.Once the skin of the pepper is burned evenly cover the pepper for a couple of minutes and then peel off the skin and chop until form a paste.

2.In a mixing bowl put all the ingredients,including the roasted pepper paste.

3.Mix until create the consistency of a spread.

 

SESAME SEEDS AND CHIVES DRESSING

Ingredients

3oz. Sesame Seeds,toasted

7oz. Mayonnaise

as needed Buttermilk

to taste Fish Sauce

3oz. Chives,chopped

to taste Salt and Pepper

Procedure

1.In a hot pan add the sesame seeds and toast without burn for a few seconds.Lightly toasted.Set aside.

2.In a mixing bowl put the sesame seeds,mayonnaise,fish sauce,chives and buttermilk (the buttermilk is just to make it thinner).Mix with a spoon and season to taste.

3.Set aside in the refrigerator until ready to use with your favorite dressing.
