Hot Chicken Salad
Ingredients
- 2 cups cooked chicken breast, cubed
- 2 cups steamed rice
- 1 cup celery, sliced
- 1 10-oz can low-fat cream of chicken soup
- 1 6-oz can water chestnuts, sliced
- 1/2 cup almonds, sliced
- 2 Tbsp fresh onion, diced
- 1 Tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 cup water
- ½ cup fat-free sour cream
- 1/4 cup low-fat mayonnaise
- 2 cups baked potato chips, crushed
Instructions
Preheat oven to 450 degrees Fahrenheit and spray 9 x 13 baking dish with zero-calorie nonstick cooking spray. Drain water chestnuts. In large bowl, mix together cubed chicken, cooked rice, celery, soup, water chestnuts, almonds, lemon juice, onion, and salt & pepper. In separate bowl, combine water and mayonnaise, then fold into chicken mixture. Spoon into baking dish and sprinkle with crushed potato chips. Bake 15 minutes or until bubbly.

Tuna Salad Bake
Ingredients
- 1 10-oz can low-fat cream of celery soup
- 1 cup celery, sliced
- 1 6-oz can water chestnuts, sliced
- 1/4 cup onion, diced
- ½ tsp salt
- 1/4 tsp pepper
- 1/2 cup water
- ½ cup fat-free sour cream
- 1/4 cup low-fat mayonnaise
- 2 7-oz cans water-packed tuna
- 2 cups baked potato chips, crushed
Instructions
Preheat oven to 400 degrees Fahrenheit and spray 9 x 13 inch baking dish with nonstick, zero-calorie cooking spray. Drain water chestnuts and tuna. In large bowl, mix thoroughly soup, celery, onion, water chestnuts, salt, and pepper. In separate bowl, stir together water, sour cream and mayonnaise, then mix into soup mixture. Gently fold in tuna. Spoon into baking dish, sprinkle with crushed potato chips. Bake 40-45 minutes.

Potato Salad Casserole
Ingredients
- 8 medium potatoes, sliced
- 8 oz turkey bacon, sliced
- 12 oz reduced-fat American cheese
- 1/4 cup onion, chopped
- 1/4 cup celery, sliced
- ½ cup low-fat mayonnaise
- ½ cup fat-free sour cream
- 1 Tbsp Dijon-style mustard
- ½ tsp salt
- 1/4 tsp pepper
Instructions
Preheat oven to 325 degrees Fahrenheit and spray a 9 x 13 inch baking dish with nonstick zero-calorie cooking spray. Slice potatoes and add to large pot, cover with water, and bring to a boil. Simmer 10-15 minutes, until tender. Remove from heat, drain, and set aside. Meanwhile, cook turkey bacon until browned in large skillet. Place on paper towels to drain. Stir together potatoes, cheese, onion, celery, mayonnaise, sour cream, mustard, and salt and pepper. Transfer mixture to baking dish. Pat turkey bacon with paper towels, crumble, and sprinkle over casserole. Bake 1 hour or until golden brown.
