Salmon with Sun Dried Tomato Olive and Garlic

Simple Salmon W/Sun-Dried Tomato, Olive & Garlic
2 lb boneless, skinless salmon fillet
2 tablespoon olive oil
2 tablespoon lemon juice
2 tablespoon chopped fresh herbs (dill, tarragon, mint, thyme)
1/2 cup sun-dried tomatoes
1/2 cup chopped black olives
1 salt and freshly ground pepper
1 sun-dried tomato, olive and
1 garlic salsa
2 centiliter garlic
1 tablespoon chopped fresh basil
2 tablespoon olive oil
1 tablespoon balsamic vinegar
First place the skinless salmon fillet on oiled foil. Next sprinkle the fish fillets with lemon juice, herbs, salt, pepper and the remaining oil. Enclose all of this with aluminum foil. Place the fish mixture packet on the grill and close the lid. Grill the fish for approximately 8 to 12 minutes or until the white juices just begin to appear. To prepare salsa, chop the tomatoes, olives, garlic and basil by hand or in a food processor until it is chunky. Stir in the olive oil and balsamic vinegar.
Makes about 3/4 cups.
Remove salmon fillets from the grill, unwrap, slide onto serving platter and serve the fish with salsa.
