Easy Salsa Recipe

Here is a quick and easy salsa recipe using Del Monte Tomato Wedges. I have tried many brands and other cuts, but the wedges taste the best to me. I plan on perfecting a fresh roasted tomato salsa recipe soon, but this one is great especially when tomatoes are out of season.

What you need:

  • 1 can of Del Monte Tomato Wedges
  • 1 to 2 jalapeno peppers - 1 for mild and 2 for hot - Note: The heat of jalapeno peppers vary, based on numerous reasons, so taste test with one and add a half a pepper at a time until you get the heat you want.
  • 2 to 3 cloves of garlic - I do like my garlic
  • 1/4 cup unpacked fresh cilantro
  • Juice from 1 lime
  • Optional - two diced green onions - I don't really care for the onion myself, but its your salsa and if you like onions - go for it.
  • Optional - salt - again I am not much for salty food.

Putting it together:

  • Drain juice from wedges, place in food processor or blender - drink the juice if you like, its pretty good
  • Smash and peel garlic cloves, add to wedges
  • Add cilantro leaves
  • Cut lime in half and squeeze the juice in the processor
  • Cut and seed Jalapeno pepper or peppers, add to wedges
  • Add the green onions and salt if you like. Be sure and chop the green onions before adding to processor.

Finishing Up:

  • Just chop and mix well with processor - I have a small two speed and use the high speed for a few seconds.

The Fun Part - Eating

  • It is great with chips and as a condiment, so kick back and enjoy.
