Samosas: complete Meal or Snack

Everyone loves samosas; they are easy to make and a nice savory along side your meal. They can be easily dipped in a chutney for extra tang.

 They can also be used for a complete meal when you are travelling. Just make your dough and cut it into small semi-circles. In other words take a small ball and roll it into a circle and cut in half. Once you have done that, just seal the linear borders together to make a cone. Hold that cone when you put in your vegetable preparation and then seal by again using a touch of water and pinching the edges together.

 Now, let's talk a little about the vegetable preparation that you can make yo fill the cone. My favorite is cauliflower and peas. Steam you cauliflower and let it break into small parts. Then mix it with cooked peas Of course, to this mixture, you will want to add your spices. My favorites are tumeric and aestifatida (which is a vegetarian kind of garlic).

Now, while you are doing this, heat up your ghee in a large wok. Test the temperature by putting a bit of the dough into the ghee to see if it cooks quickly. Now you are ready to put in your samosas. Make sure they are sealed, so the vegetable mixture does not escape. You will see the samosas browning nicely, and just turn them over to cook evenly.

Meanwhile, you might have a dinner of some nice Bhasmati rice and a nice subji together with these nice savories. There are different chutneys that you can make also.
