San Antonio Vegetarian Chili Recipe
This recipe for San Antonio Vegetarian Chili is one of the most delicious truly vegetarian chili's that you will ever eat. And remember this. This chili is much better with a much improved flavor if you make it at least two days before you want to eat it and keep it in the refrigerator for those two days before you serve it. It sets in the refrigerator and the spices just sink in and make this vegetarian chili oh so wonderful.
For Your San Antonio Vegetarian Chili You Will Need.
1. 3 Tablespoons Olive Oil.
2. 2 Cups Purple Sweet Onion Diced Fine.
3. 1 Cup Each Red , Yellow , and Green Bell Pepper Diced Fine
4. 1 One Pound Bag Frozen Whole Kernel Corn.
5. 2 28 Ounce Cans Diced Tomatoes.
6. 1 Cup Fine Diced Celery.
7. 2 Regular Size Cans Black Beans.
8. 2 Regular Size Cans Kidney Beans.
9. 2 Cups Diced Yellow Squash.
10. 2 Cups Diced Zucchini Squash.
11. 6-8 Large Jalapenos With Stems Removed Pureed In Food Processor.
12. 1/4 Cup Of Chili Powder.
13. 1 Tablespoon Sweet Paprika.
14. 1 Teaspoon Ground Cayenne Pepper.
15. 8 Cups Apple Juice.
16. 1 Teaspoon Sea Salt.
17. 1 Tablespoon Parsley Flakes.
18. 1 Tablespoon White Pepper.
You will want to put all of the above ingredients into a large stock pot but place your apple juice in the bottom. If you get to the point during the cooking of your vegetarian chili that you think it is to thick add another cup or two of apple juice but do not add water.
When all your ingredients are in your large stock pot allow the pot to slowly come to a boil and reduce heat to a simmer and cover your pot. Stir up from the bottom often and cook your pot of vegetarian chili until all your vegetables are tender. Do not cook until your vegetables become mush. You want to be able to recognize what your vegetables are.
Your San Antonio Vegetarian Chili should cook on simmer for about two hours after you bring it to a boil. You want to stir often from the bottom of the pot. Once your chili is done and you are ready to serve it top each bowl with guacamole , sour cream , shredded cheddar cheese and fine diced green onions for a delicious tasty treat. We also like to serve this chili in the pre made taco shell bowls and people love it in the taco shell bowls.
