Cheesy Eggs for Two

I know there or hundreds if not thousands of scrambled egg recipes on the web. However I am going to share this one because it has so many uses and is very easy and fast. About 5 to 10 minutes tops.

Getting Started:

  • 4 eggs - I use the free range high omega ones
  • 2 slices of American Cheese - the good stuff
  • 1/4 cup of milk - divided
  • Butter - about a tablespoon or so

Mixing it Together:

  • Crack the eggs and place the good stuff in a bowl
  • Add one half of the milk and beat with fork until blended
  • Butter non-stick skillet over medium high heat, just enough butter to cover the bottom of the skillet, about a 1/8 inch thick.
  • Add eggs to skillet and cook until almost done - just a little juicier than you like - return eggs to bowl - I always rinse the bowl before returning the eggs
  • Lightly butter the bottom of the skillet - just a good film.
  • Add the rest of the milk and cheese - wait until cheese starts to melt
  • Reduce heat to Medium - return eggs to skillet
  • Mix well and remove from heat

Now add the bacon, sausage and grits and you are good to go.

What is free range high omega ones eggs. We buy our eggs from a farmer that has free range but never heard of high omega. This sounds like a good recipe also.
