Shrimp Pork Dimsum

Ingredients :

  • 24 pcs wanton wrappers

Filling

  • ½ lb (225 g) raw shrimp, peeled
  • ½ lb (225 g) lean pork, ground
  • 4 tbsp (60 ml) pork fat, finely chopped
  • 3 chinese mushrooms, soaked in warm water for 20 minutes
  • 2 oz (60 g) bamboo shoots, diced, or
  • ½ carrot, shredded

Seasonings :

  • 3 tbsp (45 ml) oyster sauce
  • 1 tsp (5 ml) salt
  • 2 tsp (10 ml) sugar
  • 2 tsp (10 ml) light soy sauce
  • ½ tsp (2.5 ml) sesame oil
  • ¼ tsp (1 ml) pepper
  • 1 tsp (5 ml) cornstarch
  • ¼ cup (60 ml) water
  • 1 tsp (5 ml) baking soda

Procedure :

  1. Wash and devein shrimp and pat dry. Dice and put into mixing bowl. Add ground pork and pork fat, mushrooms without stems and bamboo shoots. Pound until firm. Add seasonings and pound again until seasonings are well mixed.
  2. Put 2 tsp (10 ml) of filling in each wonton wrapper. Holding the wrapper in one hand, squeeze the wrapper around the filling in a basket shape. Using a knife, flatten the top.
  3. Put dimsum in a greased steamer or on a plate. Steam over high heat for 10 minutes.

Makes about 24 pieces.
