Simple Lunch

I eat a lot of whole foods in the summer. It seems like no matter where I shop I am inundated with affordable produce. Some is locally grown, some is organically grown, and some are both. I eat organic fruits and vegetables as much as possible, but in the summer I purchase more local produce simply because it's more affordable. Another plus with purchasing local produce is it takes less gasoline to ship it to my local grocer.

This simple lunch was made with the best looking produce at my disposal. A hearty bed of romaine lettuce is topped with sliced roma tomatoes, red onion, sliced avacado, minced garlic, lime juice, salt and pepper.

A cup of organic brown rice boiled in sea salt, pepper and garlic powder rounds out the meal. Whole food and fitness expert, Susan Powter, recommends a serving of grains with every meal. I started doing this a while back and have noticed my appetite is more in control and I have more energy.
