Pumpkin Stew Recipe

Ingredients :
 
Pumpkin Peeled     
& sliced to Chunks     1 Cup.
Mushrooms Chopped      1/2 Cup.
Garlic Crushed         1 No.
Ginger paste           1 Tsp.
Chilli Powder          To Taste.
Salt                   To Taste.
Brown Sugar            1 Tsp.
Flour                  1 Tsp.
Water                  3 Cups or as necessary
Oil                    1 Tbsp

Method :

Heat Oil in a pan,fry ginger & garlic briefly.

Add in Pumpkin slices & fry for a minute.

Add Mushroom slices,salt,brown sugar,chilli Powder.

Mix gently,add water , allow it boil & simmer .

Cook till pumpkin is done roughly about 15 minutes.

Make a paste of flour & stir with the stew to thicken.

Adjust the seasoning & Enjoy with Plain Rice.

Tomatillo Salsa Recipe

 

Ingredients :

Tomatillo         12 Nos.
Red Peppers       1 No.
Jalepeno Chillies 2 Nos or to Taste minced.
Red Onion         1 No Chopped.
Salt              To Taste. Fresh lemon Juice 1/4 Cup.
 
Method :   Dehusk Tomatillos & grill along with Bell Pepper. Rest for few minutes & Peel the Pepper . Coarse chop Tomatillos & Pepper. Add everything to the mixing bowl . Stir lemon juice & Season with salt .  Serve With Torttilla Chips. 
 
 
 
Sun-Dried Tomato Pesto Recipe
Ingredients :

Walnuts            1/4 Cup.
Sun-dried Tomato   1/2 Cup Packed in Oil.
Parmesan Cheese    1/4 Cup grated.
Garlic clove       1
Olive Oil          2 Tbsp.
Salt & Pepper      to Season.
 
Method :   Drain in the Oil from tomatoes. Pre-heat the Oven to 375°F. Toast the nuts for 7-8 minutes, cool. In a Food Processor ,combine Everything. Add Oil & Process till smooth.  Serve this as a spread for baguette, sandwich or mix with warm Pasta & serve.
 
Garbanzo Bean Humus Recipe
Ingredients :
 
Garbonzo beans Canned   2 Cups.
Tahini Paste            1/4 Cup.
Ground Cumin Powder     1 Tsp.
Paprika                 1 Tsp.
Salt & Pepper           To Taste.
Lemon Juice             2 Tbsp.        
Olive Oil               2 Tbsp. Parseley                Garnishing
Method :   Drain the liquid from the can & reserve. Blend together all the ingredients to smooth Paste. Add the reserved water if too thick. Garnish with Parseley,little olive oil & serve as Dip.
 
Cranberry Chutney / Spread Recipe
 Ingredients :

Cranberries            1 Packet or Fresh
Peeled, diced apple    1 Cup. 
Orange juice           1 Cup.
Chopped dried apricots 1/2 Cup. 
Freshly grated ginger  1/2 Tsp.
Ground cinnamon        1 Tsp.
Ground cloves          1/2 Tsp. Honey                  3-4 Tbsp.
 
Method :   Simmer all the ingredients except the honey in a  deep, heavy saucepan. Cook over low heat,lid slightly  ajar,till liquid is mostly absorbed 20-25 minutes.  Add honey to taste and simmer uncovered for another  5 to 10 minutes until thick. Let the chutney cool to  room temperature.  Store in a sterilized jar, tightly covered, not sealed.  Refrigerate until needed. Before serving,  bring to room temperature.  
 
 

White Bean and Sun-Dried Tomato Spread Recipe

Ingredients :

Olive oil              1 Tbsp.
Onion, chopped         1 No.   
Garlic, minced         2 Cloves
Cannellini/white beans 1 Can 
Sun-dried tomatoes     1/4 CUp.
Lemon juice            2 Tsp. 
Parsley                1 Sprig. Salt,pepper            To taste
 
Method :   Heat oil & saute onion,garlic until onion is  just beginning to brown. Combine all ingredients  & process until completely smooth. Drizzle in  2 tablespoons of water/oil if too thick.  Season to taste with salt and pepper.   This tastes good as spread for French/Rye Bread ,  best for picnics ........
