Slow Cooker Recipe for Lamb Chops

It seems that lately all my recipes are for the slow cooker. I can't get enough of the appliance. The meat is so much more tender than when it is prepared in other ways. This recipe for lamb chops is simple:

Rinse and marinate lamb chops in 1 teaspoon each of the following spices:

Old Bay seasoning

black pepper

salt

oregano

garlic

paprika

ginger

Place the lamb chops in the slow cooker with enough water to cover. As with the slow cooker recipe for turkey wings, place the slow cooker on high for the first two hours and on low for an additional six hours.

As with the slow cooker recipe for the Caribbean style goat meat, I would add uncooked rice to the cooker during the last hour or 1/2hr of cooking time. This time, you can use some plain jasmine rice and add turmeric for coloring.

At the end of the final 1/2 hr, you can serve up the lamb with yellow rice into plates. Because they have become so tender during the hours of cooking time, you will find that the lamb chops are no longer whole but the meat is rather shredded within the rice.
