Barramundi Fillet w Papaya Salad from Bondi Road Restaurant (NY)

Ingredients:

  • 1 tablespoon fish sauce
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 3 papaya, diced
  • 2 tomatoes, diced
  • 1/2 pound tiger shrimp, poached and diced
  • 1/2 bunch fresh basil, finely chopped
  • 1/2 bunch mint, finely chopped
  • 1 teaspoon chopped garlic

For the fish:

  • 4 (eight-ounce) barramundi fillets
  • Salt and freshly ground black pepper
  • Olive oil
  • Lemon wedges, for garnish

Method:

  1. In bowl, whisk fish sauce, vinegar, lemon juice, olive oil, salt and pepper.
  2. Add the papaya, tomato, shrimp, basil, mint and garlic. Set aside.

    Sprinkle the fish with salt and pepper.
  3. Heat the oil in a frying pan over high heat.
  4. Place fish in the pan and cook it 2 to 3 minutes per side.
  5. When the fish flakes easily, it's done. If the fish doesn't test done, return to the pan for another few minutes.
  6. To serve, spoon some salad onto the plate, arrange the fillets on top of the salad, and garnish with lemon wedges.

Serves 4

Mercadito Cantina's Baja-Style Fish Tacos

Ingredients:

For batter:

  • 3/4 cup Mexican beer
  • ¾ cup water
  • ¾ cup flour
  • ½ cup fine bread crumbs
  • 1 quart canola oil

For mayonnaise:

  • 1 medium ripe avocado, peeled and pitted
  • ½ cup water
  • 4 teaspoons lemon juice
  • 2 teaspoons salt
  • 2 teaspoons honey
  • 1 large serrano pepper (or 2 if you like it spicier)
  • ½ cup store bought mayonnaise

For fish:

  • 1 pound mahi-mahi, cut into 3-inch pieces
  • Flour
  • 1 package corn tortillas
  • Coleslaw (toss napa cabbage and savoy cabbage with spicy mayonnaise, lemon juice and honey)

Method:

  1. Combine beer and water in a medium bowl.
  2. Whisk in flour and bread crumbs.
  3. In heavy large pot, heat oil over medium heat.
  4. This takes about 15 minutes.
  5. Meanwhile, combine all mayonnaise ingredients except mayo in a blender and blend to a puree.
  6. Combine it with the mayo in a small bowl.
  7. When oil is hot, place mahi-mahi into a bowl and dust with flour.
  8. Dip fish into beer batter and then place in hot oil.
  9. Fry in batches for 4 to 5 minutes or until done.
  10. Drain on paper towels.
  11. Slice up the fish into smaller pieces.
  12. Wrap tortillas in damp cloth and heat in microwave for 30 seconds.
  13. Once tortillas are hot, divide fish among tortillas.
  14. Prepare coleslaw.
  15. Top each taco with coleslaw.

Clone Restaurant Recipes - McDonald's Yogurt Parfait

McDonald's Yogurt Parfait

Ingredients:

  • 4 cups vanilla-flavored low-fat yogurt
  • 2 (10-ounce) packages sliced strawberries with sugar added, thawed
  • 1/3 cup frozen blueberries, thawed
  • 1/2 cup crunchy, sweet granola

Method:
1. Pour 1/2 cup of yogurt into a parfait cup or tall glass.
2. Add 1/2 cup of strawberries into the glass on top of the yogurt.
3. Add 1 tablespoon of blueberries to the glass.
4. Pour 1/2 cup of yogurt over the fruit.
5. Top with granola and serve. Repeat for remaining 3 glasses.

Makes 4 servings.
