I love my wife, obviously, but specifically for the fact that she is a healthy woman. She is healthy and because of this I eat better and know more about how to be healthy myself. If it wasn't for her I would just eat to my, slowly corrupted by cholesterol, hearts content.

She is, happily, always doing some form of the South Beach Diet®, which I like. I don't miss crappy carbs anyways, I miss good carbs sometimes but such is the life of a healthy person? Anyways, i digress. The point is, she makes awesome breakfast quiche all the time! Its great and easy and I am here to share this great low carb recipe with you.

The Crustless South Beach Quiche Recipe-What You Need

Recipe Ingredients:

You can add or take away any of this.


  • 8 eggs
  • zucchini grated
  • jalapeño diced
  • broccoli diced
  • spinach chopped
  • green onion chopped
  • 1/4 red onion diced
  • cheese grated
  • ham diced
  • small baking pans and/or cupcake pan with foil
  • water
  • 3 tbs ricotta
  • cayenne
  • 2 tbs cottage cheese

Put your South Beach breakfast together

The process for the South Beach style breakfast quiche is super simple. The reward is super good, tasty and you don't have to stop at fast food to get you breakfast on.

All you do is take the ingredients and get them into small pieces so they mix well. The ingredients above are just what we did but you can do any thing at all. Just do it at night and it is ready to go in the morning.

Whisk up about 8 eggs and add a little water, the more you mix the fluffier the eggs and the more they rise. Do this in a bowl that you can pour out of easily. Add in the cottage cheese and ricotta first so ou can mix it up well in the bowl. Then just dump in the rest of the stuff, reserving some cheese for the top of the quiche at the end.

Once you have the quiche in its vessel, bake at 375º for roughly 30min. When you can put a knife in it and pull it out cleanly or it is nice and firm, then it is done.

You can actually pour this mixture into whatever you have that can be used to bake with, mini bread pans like the ones to the right, cupcake pans with foil or anything else that can be then wrapped up in a small portable package. We prefer the cupcake pan with foil. The cupcake foil you can get at the grocery and I reccomend that you just use the foil part and discard the paper because it sticks.

This particular time we did little 6in bread tins which you can bring to work for a 2 day breakfast meal. Or one day if you are like me!

It really is this simple, just give it a try and you will be suprised at how simple and how much time you save in the morning trying to run around and get ready. With these either eat them at work or pop in the microwave for a minute, covered, and eat on the road.

Bakers Note

Only fill your vessel to about 3/4 full as these will rise. Notice that we didn't use the cupcake tin but just the loose cupcake foil and it still worked out. See the images to the right! Package them individually for on the go deliciousness.
