This recipe , was taught too me by 2 awesome friends from Matamoros Mexico, so if Your in the area, and want this cooked the way it originally was cooked for me, and their Cafe is still open , on Calle Sexta, named El Caballito, stop in and enjoy.
Clemente Sr. made me a plate of this and through broken Spanish, I explained I loved it, and was a cook in the US military Year before. He asked if I would like too learn how too make,. The rest is history.
( Warning, Jalapenos can be replaced with Serranos and the Cup measurement is up too the Cook and those eating. )
3 Lbs Steak -Oregano- 4 Tablespoons Garlic - heavy Pinch Salt - 2 1/2 Cups Jalapenos - 4 Cups Yellow Onions - 2 Lbs Roma Tomatoes -Oregano-Shaved Ice.
For every Pound, of Beef You use use at least 2 Peppers, 3 if You want this raging hot. Whats great about this is You start by buy the cheapest Piece of Beef in the Market, within reason, making sure that it has, also a healthy 75 -80% lean beef quality, in it's Marble and is red fresh, it is going too be a masterpiece, and also a cheap meal for 5 People, when You cook 3 Lbs, with Ingredients too match. You want too freeze the Beef until it is stiff.
Place the stiffened Beef and slice it across the Grain of the meat, so that You slice equals, sections of meat and fat. Slice it as thin as You can up too an 16th 1 Inch, any thinner You'll lose the little resistance too the Teeth that makes it enjoyable and savory. Slice the Peppers in little this Rings from tip too Top. Slice Onions in Half then Slivers. Remove top of Tomatoes, and sliver length ways , with no sliver being thicker than 1/2 where the Tomatoes skin is. In a Skillet, on High heat You place Fresh Minced Garlic, Oregano Fresh or dry, as You can get it, Salt, to Your expected favorite seasoning, when using them, and The beef, with just a Tablespoon of water too stop burning too the Pan while the water in the Meat, is pulled out. Stir occasionally.
Place Skillet, at medium High as soon as the meat is up too Temp, and wait until it starts too sizzle. Place back on High. Back on High? Place just a little more water, in the pan and begin stirring. It is helpful too have a source of water near the Skillet from the start for these moments when You have too save the Beef from Burning.
Stir The Beef on high lifting Pan when necessary. Keep Frying the that aromatic treat, until You have truly almost severely browned most all the strips of beef, and it's ready too start burning up. Now You take too the 3 Lbs of Beef, 2 1/2 Cups of shaved Ice.
Toss in Peppers, and Onions, and cook in the Broth, until You see that the Onions are becoming al'dente. Toss in Tomatoes, and cook until, the skin on the tomatoes begins too curl, because You are at the end of the recipe, this is where You adjust the Gravy, using more water, if needed on hot stoves Your just looking too insure the Tomatoes do not burn.
The Tomatoes, create a sauce, a semi thick Soup Sauce should appear about when the Tomato skin begins to curl. Don't give up if Your sauce is way too thin, or too thick, each stove has it's quirky differences. When that skin curls Your done, it's perfect, if there is way too much water, You failed the professional test of getting it done in time and all Al' Dente, but You didn't ruin the meal, You can just place it on High, until the Sauce shows up stirring the Ingredients so they don't burn. It takes a novice 3 or 4 attempts too finally become proficient, and many professionals, will need too go the Second round, and get it Bueno, on the 3rd time. Serve with Milk, Tortillas, and or, buttered bread, and enjoy. Leftovers make a great breakfast, and for Low Income Folks that have seen lean times, much like myself, this is a great recipe, when the money comes in,. It's medley of Flavors, is packed with nutrients, and vitamins, that will stimulate Your Mental Mind, when You most need it. I've found that myself run down, and completely unmotivated, until I cooked this meal, and had a nights sleep, which becomes induced with that full Glass of Milk, drifting over a Full Belly.
