Spaghetti with Clams and Mussels

Ingredients:
- 250 grams Spaghetti, cooked unsalted
- 3 tbsp unsalted butter
- ½ kg clams
- ½ kg mussels
- 1/4 kg shrimp, remove the skin (optional)
- 1/4 squid (optional)
- 2 tbsp extra virgin olive oil
- 8 cloves garlic, crushed
- 1 tbsp chili pepper sauce
- ¼ cup dry white wine
- ½ tbsp (1-2pc) lemon juice
- ½ tbsp Red Cane Vinegar
- 2 tbsp chopped parsley
Procedure:
1. Blend Butter to cooked Spaghetti. Set aside.
2. Boil 1L water and cook clams and mussel until shells open. Drain and reserve ¼ cup broth. Remove meat from its shell but reserve some with half shells on for garnishing.
3. Saute garlic in olive oil until light brown. Add chili pepper sauce, I tsp iodized fine salt (or 1 tbsp iodized rock salt), 1/8 tsp pepper, clam, mussels, shrimp, squid, wine, broth, lemon juice and vinegar. Cook for about 3 minutes. Stir in chopped parsley.
4. Toss with cooked Spaghetti. Garnish with clam and mussel in half shell.
Tips: When buying clams and mussels, look for those with tightly closed shells or slightly open shells that close when tapped. Avoid those with broken shells. Cook clams and mussels gently to prevent toughening. Add or substitute fish and squid in the recipe.
