Chicken Recipes

1. Spicy Chicken

Curried or dry, have it any which way you like.

Ingredients

  • Chicken legs (diced) – 250 grams
  • Salt – to taste
  • Red chilly powder – 10gms
  • Eggs – 1
  • Refined flour – 50gms
  • Black cumin (Shahi jeera) – 50gms
  • Lemon juice – 10 ml
  • Ginger garlic paste – 20gms
  • Ghee – 50 grams
  • Ginger chopped 20gms
  • Cumin (Jeera) powder – 15gms
  • Spice mix (Chat masala) - 10gms
  • Freash coriander – 50gms
  • Makhani gravy – 50gms
  • Yellow gravy – 25gms
  • Pickled onions – 20gms
  • Chopped chilies – 10gms
  • Dried Fenugreek (methi) – 10gms

Method

  • Clean wash and cut the chicken into 25gm pieces.
  • Add red chilly paste, red chilly powder, and salt and shahi jeera.
  • Add lemon juice. Ginger garlic paste, egg and flour.
  • Deep-fry the pieces of the chicken.
  • Heat the pan; add ghee, green chilly, ginger, jeera, and the fried chicken and little water.
  • Cook a while add the yellow gravy, jeera powder, chat masala and methi powder, let it cook a while.
  • Add pickled onions and finish with some lemon juice and fresh coriander.


2. Chicken special

Ingredients

  • Chicken – 1 kg
  • Onion – 4
  • Tomato –3
  • Coconut (fresh) – ½
  • Butter – 50gms
  • Coriander leaves – ½ bunch
  • Garam masala powder – ½ tsp
  • Chilly powder – ½ tsp
  • Ginger garlic paste – 1 tsp
  • Oil
  • Salt to taste

Method

  • Heat the pan with butter and add the onions
  • When the onions turn golden brown add tomato and fry
  • Grind the coconut finely and add it to the pan
  • Now add the chicken and mix well
  • Add the garam masala, chilly powder, ginger garlic paste, salt and fry well
  • Pour little water and allow the chicken to cook well
  • Now serve the chicken garnished with coriander leaves.


Chicken Pickle

Very easy to make chicken pickle and a favorite recipe for all ages.

Ingredients

  • 1 kg boneless chicken, cut into small cubes
  • ¼ tea spoon turmeric powder
  • Salt to taste
  • Red edible vegetable colour
  • ¾ cup oil
  • ½ teaspoons ginger garlic paste
  • 6 teaspoons red chilly powder

Method

Add turmeric powder, salt and red colour to the chicken and keep aside. Heat oil, splutter, and mustard seeds. Add chicken pieces and fry for 30 minutes or till cooked. Add ginger garlic paste to the pan. Continue frying till it releases a fragrant aroma. Add red chilly powder and fry for another 3 minutes. Remove the pan from the heat and allow to cool. Store in an air light jar and refrigerate.

Serves 25.
