Basic Traditional Sponge Cake Recipe
Ingredients: (Sponge Cake Recipe)
4 eggs, 100g castor sugar 120g plain flour, sifted 3tbsp melted butter
Method: (Sponge Cake Recipe)
1. Get ready all the ingredients.
2. Put eggs into a mixing bowl.
3. Use high speed to whisk until frothy. Add in sugar slowly.
4. Whisk mixture until very light and fluffy (test by dripping mixture into an "o" shape and it can keep the shape for 10 seconds.) Continue to use slow speed to beat for 3-5 minutes until mixture is very fine and smooth.
5. Divide flour into 3 portions and sift flour into the egg mixture.
6. Fold flour lightly into egg mixture in one direction. Add in melted butter.
7. Lightly mix in butter in one direction. Do not over-mix.
8. Pour into a lined and greases baking tin and bake in a pre-heated oven at 180°C for 30-35 minutes until cooked and golden brown. Remove and leave to cool.
