Eggs anytime
Eggs are a nearly perfect food. Eggs are inexpensive, versatile, tasty and healthy. I do not recommend that you eat eggs every day, but depending upon your existing health, 2 or 3 times a week is acceptable.
The American Heart Association acknowledges that it's possible "to fit an egg a day into a healthy diet," but only by limiting dietary cholesterol from other sources, including baked goods. Moreover, the group cautions, for people with existing "coronary heart disease, diabetes, high-LDL cholesterol or other cardiovascular disease, your daily cholesterol limit is less than 200 mg."
The next time you want an egg dish that is easier to prepare but a little bit different try this:
Scrambled eggs and home fried turnips:
Ingredients:
1 medium turnip peeled and diced.
4 eggs
Splash of milk
Sea salt and ground black pepper to taste
Olive oil
1 tomato diced.
1 small onion diced (optional)
Preparation:
Add olive oil to frying pan- heat
Add onion
Cook 3 minutes
Add diced turnips
Cook until tender.
Remove turnip and onions from fry pan, place in oven ready dish
Set oven to warm, place dish inside.
Break eggs into mixing bowl; add milk, mix until smooth and a light yellow colour
Re-heat frying pan
Add eggs and stir.
Keep stirring until egg is solid but still fluffy.
Remove turnip from oven.
Place diced tomatoes, eggs, and onion/turnip mix on plat,
Add sea salt and pepper to taste.
Enjoy.
Serves 2.
The turnips are a nice change from the traditional potatoes and you could use sweet potatoes, peeled and diced for another option. This dish can be served for breakfast, lunch or supper. It takes approximately 15 minutes to prepare and serve so is ideal for anyone who is in a hurry but still wants a healthy and tasty meal.
Our knowledge of the relationship between out bodies and what we eat is constantly evolving. The thinking about eggs and health is changing but remember that if you have a heart condition or diabetes you still need to pay close attention to what you eat. This does not mean that dinner cannot be fun and delicious.
