Delicious Pancake Mix That Beats Bisquick Any Day

Typical pancake mixes are okay, but Stonewall Kitchen mixes are far superior. This brand of pancake mix comes in many varieties beyond the ordinary buttermilk (though that kind is also excellent). I can honestly say these make the best chocolate chip pancakes I've ever had. The bits are small, so the chocolate melts entirely and won't burn. The mix itself is light and creamy, but won't overpower the taste of the chips. Great with just butter on it.

Tips for Making Better Pancakes

  • Use plenty of butter on the griddle. It  prevents burning and will give the pancakes a better taste.
  • Preheat the griddle before pouring the mix on.
  • Cooking long and slow will give cakier pancakes, while cooking fast and hot will give thinner, browner pancakes. Figure out your preference.
  • Add ingredients after 30 seconds like chocolate chips or fruit so the pieces don't fall to the bottom and get burned.
  • Make sure the pan is evenly over the burner so heat distributes evenly.
  • Use hot syrup so the pancakes will stay hot after served (though some people like the contrast of cold syrup)

If I were going to have it, I'd make some fresh whipped cream to go with it and some powdered sugar, maybe even foregoing the maple syrup entirely.
