Stuffed Mushrooms with Cider Recipe.

Ingredients

8 x 4 to 5 inch in diameter mushrooms with stalks.

2 oz of butter.

1 medium onion very finely chopped.

4 oz breadcrumbs.

4 oz Cheddar cheese finely grated.

4 tablespoons of chopped chives.

8 sage leaves chopped.

4 fl oz dry cider.


Method

Pre-heat your oven to 200 degrees Celsius or gas Mark 6.

Remove the stalks from the mushrooms and trim off the bottom of the stalks where the roots used to be. Chop the stalks finely.

Melt the butter in a pan over a very low heat. Once melted remove from the heat and brush the both sides of each mushroom with about half of the butter.

Arrange the mushrooms dark side uppermost, in a flat ovenproof dish.

Soften the onion in the remaining butter and then stir in the finely chopped mushroom stalks.

Remove from the heat and stir in all the remaining ingredients.

Pile the mixture on top of the mushrooms.

Bake for 15 minutes and serve hot.

I'm thinking that I may have all those ingredients in my kitchen ..... just not sure what dry cider is..

Hi Elisabeth, well dry cider is probably something like Strongbow", Scrumpy Jack" etc, (assuming you have those brands where you are). I am guessing any cider will do if you aren't sure, but avoid one that is too sweet, (usually the lower the alcohol content, the more sweet they are, so choose a cider that is 5% alcohol or more). PS. Just to clarify, the cider is still in liquid form and not literally "dry", only dry flavoured.

Thumbs up, Misty! These sound awesome! I make something similar with crabmeat and chopped shrimp. Never used the cider, however. Maybe I'll try using it next time!

Hi Habee, I highly recommend them, actually I am cooking them tomorrow if I can stop myself finishing off the cider first LOL :)
