Sugarless Pumpkin cookies
61ingredients
1/2 level t. white stevia powder
1 T molasses
1 C cooked or canned pumpkin
1/4 C olive oil
1/4 C butter, softened
1 T grated orange peel
2 C amaranth flour, spelt flour, brown rice flour,or kamut flour (or any combination of these flours)
1 t. baking powder
1 t. baking soda
1 t. cinnamon
1/4 t. "Real" salt
1/2 C chopped raisins
1/2 C chopped pecans
Heat oven to 375 degrees. Thoroughly mix stevia powder, molasses, oil, and pumpkin. Add butter. In a separate bowl mix next 6 ingredients. Add to pumpkin mixture. Fold in Raisins and nuts.
Drop dough by teaspoonfuls onto lightly greased cookie sheet. Bake until light brown, 10 to 12 minutes. Remove from cookie sheet and cool. These cookies are best if thoroughly cooled before they are eaten. Can be frosted.
