Summer Fruit Salsa with Cinnamon Chips Recipes
One of my favorite things about summer are the fresh fruits and vegetables. I manage to make the Summer Fruit Salsa at least once every year. It's especially great to use as an appetizer for a barbeque get together or as a garnish on fish. Your guests will love it and want to go home with the recipe. Enjoy.
Summer Fruit Salsa
Ingredients
½ cup mango, diced
½ cup pineapple diced
½ cup red bell pepper, diced
½ cup orange bell pepper, diced
½ cup cucumber, diced
1 tablespoon lime juice
1 tablespoon fresh cilantro, chopped
1 tablespoon extra virgin olive oil
1 teaspoon honey (raw if available)
Directions
Combine fruit and vegetables.
In a separate bowl, combine lime juice, cilantro, olive oil and honey, pour over fruit mixture. Mix well. Chill at least 1 hour before serving.
Please, do try your own version of this recipe by substituting your favorite fruits and vegetables. Just remember when choosing vegetables they should be on the sweet or light side so as not to overpower the fruit selection.
Strawberries, peaches and zucchini might make a good combination.
Cinnamon Chips
Ingredients
Oil for frying
6 - 10" flour tortillas
3 tablespoons sugar
1 tablespoon ground cinnamon
Directions
Heat oil in a heavy skillet. Slice tortillas into triangles and then slice one more time for slimmer triangles. Place tortillas into oil and fry until golden brown, about 3 or 4 minutes. Drain on paper towel. In a gallon size zip lock bag, place the sugar and cinnamon and shake to mix. Place the tortillas into the bag and shake until evenly coated.

Use raw honey instead of the sugar. I think you will find that it won't affect your blood sugar. make sure it's raw.
