Summer Watermelon Recipes
63With watermelon season in full swing, now's the time to try out a few new recipes and make use of this healthy fruit. While it's great just enjoyed on its own or with some cool whip topping, there are plenty of other ways you can consume it. From breakfast dishes to salads to main course meals and then of course dessert, you'll never grow tired of all the things you can do with watermelon.
Below are a few recipes to get you started.
Avocado Watermelon Salad
This recipe is chock full of vitamins and will help you reach your 10 servings of fruits and vegetables a day along with supplying you with some healthy fats.
2 large avocados, diced
4 cups cubed watermelon
2 cups spinach leaves
2 cups romaine lettuce leaves, ripped into bite-sized pieces
¼ cup slivered almonds
1 cup balsamic vinaigrette salad dressing
In a large bowl, toss together the avocado, watermelon cubes, spinach and lettuce. Drizzle the salad dressing on top and then sprinkle on the slivered almonds. Serve immediately.
Creamy Watermelon and Peach Pie
This is a great dessert to offer your guests that's a twist on the more traditional chocolate or lemon pie.
1 package watermelon flavoured Jell-O (sugar free preferred)
¼ cup boiling water
1 (12 oz) container frozen light whipped topping
1 ½ cup seeded watermelon
1 cup canned peaches, drained
1 9-inch graham cracker crust
White chocolate shavings
In a large bowl, first dissolve the gelatine in boiling water. Let this cool to room temperature and then mix in the whipped topping. Once stirred, add in the watermelon and peaches and mix again. Transfer this mixture to the pie crust, sprinkle with white chocolate shavings and then place in the fridge for about 2 hours before serving.
Watermelon Pie
If you're looking for something very different, give this recipe a try.
1 ½ cups all purpose flower
3 cups mashed watermelon with the seeds removed
1 cup mandarin orange pieces
½ cup honey
¼ cup sugar
¼ cup artificial Sweetener
½ tsp salt
1 tsp ground cinnamon
½ cup sesame seeds
1 cup cool whip topping
First place the flour in a dry skillet over medium heat temperature. Cook this for a few minutes, stirring occasionally and then set aside to cool. Meanwhile, preheat the oven to 350 degrees F. In a large bowl, combine the watermelon, honey, sugar, salt and cinnamon. Next sprinkle half of the sesame seeds over the bottom of a greased 9 inch pie plate and then pour the mixture over top, sprinkling the remaining sesame seeds over the top of this.
Place in the oven to bake for about forty to fifty minutes and then remove to cool. Once completely cooled spread cool whip topping over and serve. Make sure to put the leftovers in the fridge promptly. Note that this dessert has a pudding type of consistency to it.
Watermelon Slush
If you're looking for a nice cool drink to have on a hot summers day, this is the perfect alternative to your typical high-sugar, nutrient devoid slush purchased at the local gas station.
6 ice cubes
1 cup cubed watermelon
1 cup cubed honeydew or cantaloupe melon
1 tsp honey
Place the ice cubes in a blender and pulse-blend it until they are crushed. Next add in the watermelon and honeydew or cantaloupe and blend for about one minute longer, or until slushy. Finally add in the honey and blend for about 10 more seconds. Serve with a twist of lime.
So give any of those recipes a try when you grow tired of eating just plain watermelon (if that happens!). It's not thought to be a fruit you traditionally cook with but if prepared correctly, can really make for a tasty dish.
