Tropical Drinks
With summer almost upon us, I thought it would be a great idea to share these refreshing summer drinks. I hope the videos at the end put you in the mood for celebrating the summer season.
Enjoy!
Daiquiri Made With Coconut
Ingredients:
6-8 coconuts
2 cups light rum
2 cans (6 oz. each) frozen lemonade
2 1/4 cups water
Preparation:
At the top of each coconut are three soft spots. Pierce one with an ice pick or similar instrument and drain liquid. Repeat with each coconut. Now freeze or chill coconuts for at least three hours.
Stir together the rum, lemonade concentrate and water. Chill for approximately one hour.
Remove coconuts from the fridge and place each coconut upright in custard cups. With a funnel, pour 3/4 cup of the rum mixture into each coconut. Insert straw in each and enjoy. (6-8 servings)
Pineapple
Pineapple Outrigger
Ingredients:
2 fresh pineapples
1 pint strawberries
1/2 cup light corn syrup
2 tablespoons water
2 tablespoons orange flavored liqueur or 1 tablespoon thawed orange juice concentrate
Preparation:
When selecting pineapples, select ones with fresh green leaves. Cut each pineapple in half lengthwise through the green top, then cut each half in half again. Cut core from each pineapple quarter and cut along curved edges with a grapefruit knife. Cut fruit crosswise into 3/4 inch slices. Pull slices by alternating the pulls from each side. Fill the spaces with strawberries.
Now, stir together corn syrup, water and liqueur. Just before serving, drizzle over pineapple boats.
HINT: These can be prepared and refrigerated two hours before serving.

These all sound very good! I have never considered a strawberry-pineapple combination before and am definitely going to try the Pineapple Outrigger recipe!
Pineapple is good for bone strength, I read somewhere. And it's got lots of fiber and Vitamin C. What more with strawberries! And that coconut water and rum concoction is superb for sumer while idling on the beach!
Hi Laughing Mom,
Sorry about the tomato drink. I'm not sure but I think if push came to shove you could try making it with actual tomato juice. That's if you even like tomato juice :)
Party at my place!

Hi lowlycook,
I've never heard that before. That's good to know as I do love pineapple. Hope you try these and enjoy.

Oh to be in Hawaii with a coconut daiquiri and that lovely music...tra la la! :)
Hi Feline,
LOL, yes! I agree. Too bad I am petrified of flying :( Even though I have flown, the older I find myself, the more terrified I am of it. Guess I'll go to Long Beach Island and pretend it's Hawaii :)

These sound wonderful. I can't wait for summer to hit - too much snow this year.
Hi RGraf!
It surely was a long winter, even though we had hardly any snow. Yesterday and today it hit 90+ and once more tomorrow, then back to 50s and 60s by Wednesday they're saying.
Personally, I hate summer and not crazy about winter. I wish it could be about 80 all year long with no humidity. To me that would be heaven.
Thanks for stopping by and commenting! Enjoy the drinks!
These drinks sound very refreshing especially the pineapple outrigger. I'm ready for this right now. Thanks for sharing these recipes.

Trish, these are absolutely mouth-watering. Love the idea of the filled frozen coconut. Maybe that party will be at my house this weekend? :) You bring the rum, I'll get the nuts. And I'll put up the big umbrella and run the sprinkler...well, we can pretend, right?
Yes, these sure do sound refreshing. Party at your house? sounds like a plan :)
I'll see what I can do. Pretending is also good.

The thought of being in Hawaii with a coconut rum drink takes me into a fantasy world
Great Hub!!

Hi mdawson,
Yes, it's definitely something to dream about. I have to content myself with a fantasy also, since I hate flying :)
Glad you enjoyed this, thanks for stopping by and commenting.
Great beverages for those hot, summer days. Great hub, Trish!

When I was living in Southeast Asia, I would daily drink from a coconut like the beginning picture. In Cambodia, it was actually cheaper to buy a coconut than a small bottle of water, and there was about the same amount of liquid in each. Go figure.
Hi Benji!
Ohhhhhh that sounds yummy! As a kid, I loved fresh coconuts. Now, however, I don't so much. While I love the taste of coconut, I find it leaves my mouth dry. How exciting that you lived in Asia. If you haven't yet, perhaps you can write a hub about that experience.
So nice to see you! thanks for stopping by.

The music is perfect! And they all look delicious--well maybe all but the sparkling tomato juice. :-)
Are we having a tropical party at your place?
