Super Simple Salmon Loaf

Here is another very simple recipe that anyone can make and always tastes good.

Ingredients:

  • 1 full sized (8oz) can salmon packed in water
  • 4 slices of bread. (I prefer whole wheat but white, or even slightly stale hamburger buns will work) ripped into 1/2 inch or so pieces.
  • 1 can condensed milk
  • 1/2 an onion very finely chopped
  • 2 eggs
  • 1 tablespoon minced parsley
  • 1/2 teaspoon salt

Here we go!

  • Mash it all together in a bowl until you have a big pink ball.
  • Place in well greased bread pan
  • Cover with foil
  • Put in pre-heated (325) oven for approximately 1 hr.
  • Remove foil for second half of cooking to form browned top.

You will know it is done when a knife stuck in the center does not come out "goopy" and the top is brown.

All ingredients (except for the eggs) are safe to eat uncooked, so there is no worry if you remove it a bit too soon (eggs cook @ 180 degrees so unless it is still cold they will be safe). You can always put it back in the oven as well!

We serve it with a side of spinach and a sauce made from equal parts mayonnaise and sour cream with a heap of dill and a pinch of salt.
