Salmon - superb - a versatile fish

Salmon, salmon, salmon. I love food - but the only way I can afford the dishes I like, is to cook them myself.

I’m a simple guy – especially when it comes to cooking. I’m not a trained chef you understand; I’m not a recognized cook – I’ve only been doing it for about nine years, and almost exclusively in a BBQ – yet I know I turn out dishes that are often better than local restaurants.

I have a covered gas BBQ, but use it mostly as a gas oven or griddle, and have come to understand how to get the best out of food on it.

I like fish. Not to watch, not to own or breed. I like to eat fish. I think there are so many ways of cooking the many different varieties that recipes are virtually endless.

I’m a fan of fresh salmon. It’s probably the most versatile of all the fish I’ve cooked. Tonight we’re having salmon, and this one of my favourite ways of cooking it.


Salmon Recipe

For two people

  • 2 salmon fillets
  • 1 leek
  • ¼ red or green pepper
  • 2 oz cheddar cheese
  • 1 slice of bread
  • Splash of dry white wine (optional)
  • 4 green olives
  • ¼ courgette
  • BBQ safe cooking container
  • Black pepper


Getting down to the salmon recipe

  • Clean the leek and finely chop it.
  • Dice the pepper
  • Slice the olives
  • Slice the courgette

Lay them as a bed on a BBQ-safe cooking container and splash a little dry white wine around, then place the salmon on the bed of veg.

  • Grate the cheese.
  • Blitz the slice of bread into crumbs.
  • Mix the breadcrumbs, cheese and a pinch of black pepper.

Spread the cheese mix over the salmon. Cover the container with foil and cook the salmon for 15 minutes in a preheated BBQ or oven at 375F, 190C, gas mark 5 (to be honest I just bung it in when the BBQ is up to temperature- the dish is fairly tolerant)

Absolutely superb!

That's all there is to this simple yet rewarding salmon recipe. All that remains is to eat and enjoy - but don't forget that bottle of wine to wash it down....

Hope you like the dish. I'm a simple soul, so I can promise there's nothing difficult about it. I find salmon very versatile - so many ways to cook it, it's great.

I am a big fan of dead salmon that is cooked; however, more importantly dead Pacific salmon that is cooked. Your recipe sounds excellent; I will try it first with a Pacific salmon species.
