Sweet Corn Bread
Right now as a summer time some vegetable are not much expensive, especially corns is very cheap in every summer time of the year, but this year is doesn’t cheap like those past years, that maybe because the economy still going down and not getting better yet. Gas price are keeping going up, and everything are increased in price.
I remember I brought corns from bi-lo, and Publix store last year for only $1.00 for eight or ten (10) corns, but this year four(4) corns is $1.00 that kind of expensive when compared to last year, but I still buy its because me and my kids are liked corn bread, and boiled corns, and sometime I put in my fry rice too, and I make corn pudding, corn eggs and many more that can make with corns. My youngest daughter, she is five years old, and every time she went to shopping with me and when she saw corns, she will say "Oh! corn, mommy mommy buy corn buy corn!" asked me lots of time to buy her a corn, so when corn is not much expensive I will buy it every time when I go for grocery shopping. And because I has four kids I will always watch my money or be careful about what I will buy for them, if it’s at discount prize then I will buy it, and if is not I have to wait until next time.
And this time I will share you with corn bread recipe.
Sweet Corn Bread
Ingredients;
2 ½ cups milk
½ cup olive oil or butter, let it soft at room temperature
4 eggs
3 cups cornmeal
1 ½ cup all purpose flour
½ cup sugars
½ teaspoon salt
5 fresh corns, slice it 2-3 time with knife
3 Pans or cup cake pan
How to makes
Preheat oven to 420 degree. Coat pans with oil, butter or cooking spray.
- Combine milk, olive oil, eggs, cornmeal, all purpose flour, salt, and sugars in a mixing bowl. Beat with an electric mixer on low speed first then raise speed to medium speed until well blended.
- Stir in corn
- Pour batter in pan or cup cakes pan.
- Bake for about 20-25 minutes or until the top of the bread is golden color or when you inserted a toothpick, fork, or knife in center and come out clean.
Note: In my recipe I don’t like to put in baking powder into my corn bread and still come out beautiful and test good. And if you put less corn, the corn bread will dry. So if you don’t like to eat dry corn bread, consider to put in more corns in your recipe.
You can added vitamin C in corn bread by put in just one green pepper, orange, or yellow pepper in your corn bread. I like to eat orange and yellow pepper but if it to expensive then I will buy green pepper instead.
