A low-fat alternative to french fries

This is a way for people who are dieting to enjoy fries without having to worry about calories too much. It uses sweet potato instead of regular ones. You can also add other ingredients to give different kinds of flavour.

You shall need:

2 or 3 sweet potatoes

seasoning

olive oil

chopped onions (optional)

garlic (optional)

what you need to do:

peel you sweet potatoes into french fry shapes - thick ones are better than thin, sweet potato tends to be a bit more fragile than it's non-sweet cousin - so it's thick-cut here. Once they are cut then blanche them in boiling water.

You need a hot oven for this - about 210 - 220 degreees centigrade. Drain your blanched sweet potatoes and toss in olive oil, if you want to flavour with garlic then mix minced garlic through the oil before you toss. Another alternative is to toss with chunks of onion.

transfer your sweet potato onto a baking tray and season with salt and pepper. bake for about 20-30 minutes - until the fries have crispened up.

Thanks for this! I was just talking about using sweet potatoes instead of russets, but I didn't have a recipe. Then, voila, you come along. I'm going to buy some sweet potatoes at my next trip to the grocery store.

Angela, it doesn't hurt to give the fries a little flip about half way through cooking

Why wouldn't you have to worry about calories with these fries? Still sound pretty calorific.

And what type of Olive oil would you recommend for this recipe? (because I'm still going to try it out!!) LOL

Snappy DH, They dp contain calories, just not as much as regular fries. They don't absorb anything like the same amount of oil. Sweet potatoes contain less carbs than their non-sweet cousins. I don't usually pick a certain brand of olive oil - I just choose by which bottle looks nice...
