A cottage pie is a pie made with minced or ground beef, a shepherd's pie is a pie made with minced or ground lamb - so I got to wondering a few days ago what one would call a pie made from minced or ground pork? Do you agree that "Swineherd's Pie" is an appropriate title for it? I hope so. Let's therefore take a look at how I set about making my version of a swineherd's pie...


Swineherd's Pie - The Ingredients

In order to make this delicious pie, you will need:

1lb of minced/ground pork

2lb of poatoes (gross weight)

1 medium sized carrot (diced)

1 small white onion (peeled and finely chopped)

2 cloves of garlic (crushed or very finely chopped)

1 green apple (I used a Granny Smith, cored, peeled and diced)

1tsp fresh chopped sage leaves (or half tsp dried)

Salt and pepper to taste

Swineherd's Pie - The Method

Brown the pork in a large, non-stick saucepan. Add the garlic, carrot, onion and apple and simmer for fifteen to twenty minutes, stirring frequently. Note that there is no requirement to add any fat or oil at any stage.

Peel and chop the potatoes and boil until soft. Mash or puree them with a little butter. Put the pork mixture in to a large, oven-proof dish and spread the potato evenly over the top. A fork can be used to create a pattern on top to make for greater presentation.

Place the dish in to an oven pre-heated to 200 degrees celsius or equivalent. Cook for 30 to 35 minutes until the pie starts to brown on top. Serve with your choice of fresh vegetables.
