Cake Mix Cookies: A Fun and Easy Way to Bake with Kids

Kids just love cookies!. They also like to help Mommy in the kitchen.
Baking with your children is a nice family activity, and it can be educational as well. You can teach measurement, temperature, basic reading skills, following directions, and proper home safety, while you mix, bake and sample the recipes.
Cake mix cookies are inexpensive, extra easy and delicious! The recipes can be adapted in an endless variety of ways. And with a bit of colored cellophane, decorative tins, ribbons, gift tags, glitter and markers, they can be turned into uniquely creative homemade gifts.
Following you will find six scrumptious recipes for double chocolate sandwich cookies, mixed chip, M&M, lemon, oatmeal spice, and double peanut butter cookies.
Sound good? Then gather the kids and start baking!
Double Chocolate Cake Mix Sandwich Cookies
1 box chocolate cake mix (with pudding in the mix is best)
1/2 cup butter, softened
1 egg
2 tablespoons water
1 cup chocolate chips
1 can any flavor frosting (or if you prefer, use whipped topping)
Combine cake mix, butter, egg and water at low speed until thoroughly moistened
Gently stir in the chocolate chips.
Drop by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheets.
Bake at 350 for 9-12 minutes.
Cool two minutes; remove from cookie sheets.
Spread frosting between two cookies, and sandwich them together.
Mixed Chips Cake Mix Cookies
1 box cake mix (any variety)
1 cup semi-sweet chocolate, caramel, mint, white chocolate, butterscotch, and/or peanut butter chips, in any combination you like
1/ 2 cup oatmeal
1 /2 cup oil
2 eggs, slightly beaten
1/ 2 cup raisins
1 tsp. vanilla
nuts (optional)
In a large bowl, combine all the ingredients, blending well.
If the mixture is too stiff, add a little water.
Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets.
Bake at 350 for 8-10 minutes or until set.
Cool 1 minute before removing form the cookie sheets.
M&M Cake Mix Cookies
1 box yellow cake mix
2/3 cup oatmeal
1/2 cup butter, melted
1 egg
1/2 cup M&Ms
In a mixing bowl, beat the cake mix, oatmeal, butter and egg.
Stir in the chips.
Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets.
Bake for 10-12 minutes or until lightly browned.
Immediately remove to wire racks to cool.
Lemon Cake Mix Cookies
1 lemon cake mix (with pudding in the mix is best!)*
2 tablespoons water
2 eggs
1/2 cup vegetable oil
1 teaspoon lemon extract
1/2 cup crushed pecans
confectioner's sugar
* If you prefer, you can use a regular cake mix, add one box of vanilla or lemon pudding, and increase the water by 1/4 cup.
Mix all the ingredients together.
Form the dough into balls, and roll them in confectioner's sugar.
Bake on lightly buttered baking sheets or sheets covered with parchment paper.
Bake at 350 degrees for 8-10 minutes.
Easy Oatmeal Spice Cake Mix Cookies
1 box spice cake mix
2 cups uncooked rolled oats
2 eggs
3/4 cup vegetable oil
1/4 cup milk
2 cup raisins
1 cup chopped pecans or walnuts
1/4 cup firmly packed dark brown sugar
Combine all ingredients, mixing well.
Drop by teaspoonfuls onto an ungreased cookie sheet.
Bake for 10 to 12 minutes at 350 degrees.
Cool on the cookie sheet for about a minute, then move to a wire rack to finish cooling.
Double Peanut Butter Cookies
1 box yellow or white cake mix
1 cup peanut butter, crunchy or creamy
1/2 cup vegetable oil
2 tablespoon water
2 eggs
1/2 cup peanut butter M&Ms
Mix all ingredients well by hand.
Drop by teaspoonfuls 1 inch apart on an ungreased cookie sheet.
Bake for 12 to 15 minutes at 350 degrees.
Cool on wire racks.
