Taco Bell History

Taco Bell is a fast food Mexican restaurant franchise. The first Taco Bell restaurant opened in the 1960s in California. Now there are Taco Bells around the world.

does anyone know what goes into Taco Bell"s refried beans to make them taste the way they do? I've searched the internet exhaustively and found many TAco Bell copycat recipes but none for their beans. Please respond.

I was looking for the same info. I worked at a Taco Bell as a teenager. Back then it was pinto beans, salt, lard and water all pressure-cooked together. I don't remember the measurements, though. I also know they replaced the lard 20+ years go with some sort of vegetable oil.

Carla and Valerie, I actually think that I have a copycat recipe for Taco Bell refried beans. I haven't used it in a long time because of my husband's health issues. But I will try and dig it up, as I never throw away recipes. ;-)

when I worked there 8 years ago they were just dried beans to which we added water and then they turned into a goo paste. I am in Canada and I am not sure if it is the same in the states.

I just left my job at Taco Bell, last month after being there for 6 years. The beans are now a dehydrated form that you add 190 degree water too, and stir until it becomes a paste. The ingredients are not listed on the packaging, it is one of the few items that does not list the ingredients. But a month before I left the did change the type of beans that they were using and the taste of them changed all together though!

As far as the rice goes, 4 Quarts of 190 water 4 ounces of oil, mexican rice seasoning, stir it up until the seasoning is well mixed, add 4 cups of rice and stir!

Cheesy beefy melt is beef 3 cheese and sour cream.

does anyone know how to make their cheese sauce. i've tried just melting cheese. not recommended...comes out greasy and sick. i've heard of a good cheese sauce. by just melting cheese with milk to thin it out. but i want a more authentic Taco Bell style cheese sauce.. help =/

Mandy, I work at taco bell right now, and I know that the fiesta salsa has all of the ingredients you listed, and then some sort of dressing mixed in with it. I think it's some sort of spicy/sweet mixture (since I remember reading the ingredients once and it has jalepenos in it), but I can't remember it off the time of my head.

For Skylar, I might just buy frito brand salsa de queso or something. Either that, or melt down some velveeta. Mmm!

@skylar - I've tried several brands of store-bought cheese sauce and the one that comes closest, is Mission Brand. Microwave a bit in a bowl and it tastes like Taco Bell's. I think the difference is that Taco Bell's cheese sauce has been sitting in a double boiler for 8 hours before you order it. :-P

I worked for Taco Bell for 8 years in the late 70's and 80's and have made many a refried bean with them. The original recipe for the beans were made in a large bulk as follows: 13 lbs sorted pinto beans, 2 lbs lard, 13 oz of salt, cover with water (about an inch or so above the top). We cooked them in a very large pressure cooker until they soft. Mash, pour in plastic pan, refridgerate, reheat to 165

degrees, the key is to make sure that they get completely cold, we refrigerated them overnight always in large bus pans and also never over heat them on reheat because scorching them gives a bad taste. We used a drill with a mixer head on it, like you mix cement with to mash them. The consistency should be like a very thick pudding after initial cooking add water if necessary it won't change the taste at all. If you get too much in initially they will be runny but they won't taste different.

We used the pressure cookers to speed up the cooking process. Don't substitute the lard, it's the kind in the blue box, I'm sure it won't be hard to figure this down to a 2 lb bag of beans. Let's try:

2 lbs beans, 2 ounces (12 tsp/3 TBLS) salt, 4.5 ounces lard (a little more than 1/4 cup, cover with water and cook until very, very soft, mix or mash till smooth, refrigerate overnight or longer, reheat to 165 degrees. Let me know how it goes.

I need to know how to make the white sauce that Taco Bell puts on their burritos. Like the grilled stuff steak burrito. That would be awesome if you could figure that out. Ive looked all over the web and it seems like all the other sauces have recipes on the net but not the white sauce.

I am desperately trying to find the recipe for the "fiesta salsa" that is used on the Baja Gorditas. I have the Pepper Jack Sauce recipe...on here it's called Baja sauce. I could also use a recipe for the chicken on the Baja Gorditas. Thanks in advance!

"Brad" the white sauce you are reffering to is Lime Sauce (which Taco bell no longer uses and now uses Guacamole Sauce)

Lime Sauce

1/2 cup sour cream

1/2 cup mayonnaise

1/2 cup milk

2 tablespoons chopped cilantro

5 tablespoons lime juice

1 tablespoon white wine vinegar

1 clove garlic

Process lime and cilantro. Then add everything else. Process everything else. Blend until smooth

This is what I found on the internet, I havent tried but sounds like it would be about right.

um no the white sauce is baja or pepperjack sauce as was said earlier the nacho cheese is just jalepeno cheese sauce
