Tossed Salad On The Go

This weekend I traveled to Bakersfield, Ca for a meeting I had offered to attend (I am a fool!) We drove up Saturday (it's a six hour drive) and I didn't want to spend a lot of money or risk a lot of calories eating out, so I did the sensible thing: I raided the fridge, and packed myself a lunch.

I was brilliant. I packed a lovely heathful lunch, consisting of apples, bananas, and green salad. The salad was two handfuls of those spring greens, with baby romaine, arugula, raddicio, spinach. I took a few small slices of cheese torn into bits and a small handful of Italian Seasoned Croutons and threw them all into a big gallon sized bag (it was all I had that would hold it). I skipped the salad dressing, as I figured it would be too messy to eat in the car.

Then I got busy packing the rest of my stuff, so when it got down to leave, I tossed my salad in a small insulated lunch box and ran to jump in the car, without realizing that I had left out some very important things.

Like a bowl.

...And a fork.

Hours later in the car, on the road, I get hungry. And as I pull out my lunch it occurs to me that I have just invented tossed salad to go, with the interesting addition of being fingerfood as well.

I discovered that the seasoning from the croutons came off if you shook the bag to toss everything and it coated the greens and cheese like a dry dressing. And since I lacked a fork, I used the only other utensil I had available: my fingers.

All in all, it was a fairly pleasant experience.

I did that before when I forgot my fork at work. Fingers and salad work. Sounds cheaper than eating out too.
