Tasty Tomato Pie

This particular recipe is great as a sidedish or as a main meal, especially if your are a vegetarian. This dish is similar to a quiche, minus the cheese. Oh I forgot to mention, use this dish for brunches or breakfasts. Here it is. Enjoy!

All the Players (Ingredients)

6 green onions (sliced)

1/2 cup chopped sweet onion

3 tbls. butter

2 lbs. of tomatoes (peel, seed and chop)

1 pie shell,unbaked (9 inches)

3 whole eggs

1 1/4 cups half and half

1 1/4 tsp, salt

1 tbls. chopped basil or 1 1/4 tsp. dried basil

2 pinches of white pepper (black pepper can be used)

 

Start Playing

Preheat Oven to 450 degrees F for Pie shell

Take a large skillet and saute' onions in the butter until they become translucent and tender. Add the tomatoes, stir and cook over low heat until they become softened. Take the pan from the heat, and cool for about 10 minutes. Cover the pastry shell with heavy-duty aluminum foil and bake in the oven at 450 degrees F for 5 minutes. Remove the foil and continue baking for another 5 minutes. Remove pie shell and reduce heat to 350 degrees F.

Next get a mixing bowl and immediately beat the eggs, cream, salt, basil and pepper until smooth. Add the tomato mixture and pour into pie shell. Bake for 50 minutes or until a knife inserted in center comes out clean. Let your tomato pie rest for about 5 minutes before cutting and serving.

Hey Melissa G, I love quiche also,but this tomato dish without the cheese gives you all tomato which I just can't get enough of. Enjoy when you make it!
