TEA WINE AND GINGER WINE

These are some of the recipes i managed to get from a goan friend..hope you like it..

Required: 2 litres of freshly made tea, i kg sugar, 250 grams raisins, ( chopped or minced), 2 limes, 15 grams yeast granules.

Method : Prepare tea the usual way and add sugar, raisins and sliced lime. When the mixture is lukewarm add the yeast and stir well. Pour into a jar for fermentation and keep for a month.Siphon and bottle.

Ginger Wine

Required: 100 grams ginger, 2 oranges, 2 limes, 250 grams raisins (chopped) 1 cup very strong tea, 1 1/2 kg sugar, 5 litres water, 15 grams yeast granules,or 30 grams of fresh yeast.

Method: Crush the ginger well taking care to see that none of the juice escapes. Bring the water to boil for half an hour add sugar and ginger and boil for half an hour, topping up the water to keep the original quantity. Place the rind and juice of the fruits with the raisins and tea in a large vessel and pour the hot liquid over it. Mix and allow to remain till lukewarm. Now add the yeast, cover and allow to ferment for a week. After this strain into fermentation jars and when fermentation ceases siphon and bottle

My daughter read your hub and she wanted to try that. She followed everything very carefully but mistook lime for calcium. She took 2 cake of calcium.When the tea was luke warm it had a different colour.Thank God she explained everything to her mum. We enjoyed this risky joke. By the way Goans really do it.Nice Hub.
